This light take on classic Alfredo sauce retains all of the creaminess and flavor but clocks in at less than 300 calories per serving (including the pasta)!

Ingredients
  • 8 oz. (about a half box) pasta
  • ½ tbsp. butter
  • 2 cloves of garlic, minced
  • 1 c. 1% milk
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ¼ tsp. nutmeg
  • 1 tbsp. cornstarch
  • 2 tsp. cold water
  • ¼ c. parmesan cheese
Instructions
  1. Cook pasta according to package directions. Drain and set aside.
  2. Melt butter in a saucepan over medium heat.
  3. Add garlic and saute for 2-3 minutes or until fragrant.
  4. Add milk, salt, pepper, and nutmeg.
  5. Stir sauce occasionally and bring just to a boil.
  6. While sauce is cooking, add the cornstarch and cold water to a small bowl or measuring cup. Stir until completely smooth, but still slightly thick.
  7. As soon as sauce starts to boil, slowly add the cornstarch mixture, stirring constantly.
  8. Sauce should begin to thicken. Cook for another minute or until sauce is desired thickness.
  9. Remove from stove and stir in parmesan cheese.
  10. Toss pasta with sauce and serve immediately.
