This decadent take on macaroni and cheese features fresh goat cheese and fine herbs and takes less than 45 minutes from start to finish.

Ingredients
Macaroni and Cheese
  • 1 lb. pasta (I used cavatappi)
  • ¼ c. butter
  • ¼ c. flour
  • 4 cloves garlic, chopped
  • 3½ c. milk
  • 1 tsp. salt
  • ½ tsp. nutmeg
  • 1 tsp. dried rosemary
  • ½ tsp. thyme
  • ½ tsp. pepper
  • 8 oz. goat cheese, cut into 10-12 slices
  • 2 c. (8 oz.) sharp white cheddar cheese, shredded
  • ½ c. parmesan cheese, grated

Topping
  • 3 tbsp. butter, melted
  • 1 c. panko breadcrumbs
Instructions
  1. Preheat oven to 375 degrees.
  2. Cook pasta one minute less than the al dente package instructions. Drain and set aside.
  3. In a medium saucepan, melt ¼ c. butter.
  4. Add garlic and saute for 2 minutes or until garlic is fragrant.
  5. Slowly whisk in flour, stirring constantly. Reduce heat to medium-low and continue stirring for 2 minutes until the roux mixture is completely smooth and bubbling slightly.
  6. Add milk and return heat to medium-high.
  7. Stir in salt, nutmeg, rosemary, thyme, and white pepper.
  8. Bring sauce to a boil and stir until thickened. Remove from heat.
  9. Add slices of goat cheese, stirring until completely melted.
  10. Add about two thirds of the grated cheddar cheese and all of the parmesan cheese, stirring until melted.
  11. Pour sauce over cooked pasta, then transfer to a greased 9x13 baking dish or several small ramekins.
  12. Sprinkle remaining cheddar cheese over pasta.
  13. In a separate bowl, combine 3 tbsp. melted butter and panko breadcrumbs.
  14. Sprinkle buttered breadcrumbs over pasta evenly.
  15. Bake pasta at 375 degrees for 30 minutes or until breadcrumbs turn golden brown.
  16. Cool for 5 minutes before serving.
