This easy but flavorful French toast casserole is sweet and fluffy and can be prepared the night before.

Ingredients
FRENCH TOAST
  • 1 loaf of French or Italian bread
  • 8 eggs
  • 3 c. milk
  • ½ c. brown sugar
  • ¼ c. sugar
  • 2 tbsp. vanilla extract
  • 2 tsp. cinnamon
  • ½ tsp. ground nutmeg

STRUSEL TOPPING
  • ½ c. flour
  • ½ c. brown sugar
  • 1 tsp. cinnamon
  • ¼ tsp. ground nutmeg
  • ½ c. cold butter
Instructions
  1. Spray a 9"x13" baking pan with non-stick spray.
  2. Cut or tear ½" to ¾" square chunks from the loaf of bread and add directly to the greased pan.
  3. In a large mixing bowl, whisk remaining French toast ingredients together completely.
  4. Pour egg mixture evenly over the top of the bread chunks.
  5. Cover tightly and refrigerate, overnight or until ready to bake.
  6. Prepare the strusel topping (which also can be refrigerated overnight, if desired).
  7. Mix all dry strusel ingredients together and cut the cold butter into small slices.
  8. Add the cold butter and dry ingredients into your food processor and pulse until fully combined, or use a fork to combine manually.
  9. Preheat oven to 350 degrees when ready to bake.
  10. Uncover French toast and sprinkle the strusel topping evenly over the top.
  11. Bake, uncovered, for 45-50 minutes or until strusel topping is golden.
  12. Cool for 5 minutes and serve with maple syrup, if desired.
