Ingredients
WAFFLES
  • 2 eggs
  • 2 c. all-purpose flour
  • 1½ c. milk
  • ⅓ c. butter, melted
  • 4 tsp. baking powder
  • ½ c. light brown sugar
  • 1 tsp. ground cinnamon
  • ½ tsp. nutmeg
  • 1 tsp. vanilla extract
CINNAMON BUTTER
  • ¼ c. (half stick) of butter, softened
  • ⅓ c. powdered sugar
  • ½ tsp. ground cinnamon
Instructions
  1. Preheat waffle iron.
  2. Beat eggs in a large bowl with a wire whisk until fluffy.
  3. Whisk in remaining waffle ingredients, just until smooth.
  4. Spray preheated waffle iron with non-stick cooking spray or grease with butter.
  5. Pour about ⅓ of the batter onto the waffle iron.
  6. Cook about 4-5 minutes or according to your preference and waffle iron's specifications.
  7. While waffle is cooking, prepare cinnamon butter by folding the powdered sugar and cinnamon into the softened butter with a spatula.
  8. After removing waffles from the waffle iron, spread cinnamon butter generously on the top.
  9. Serve immediately. Yields 12 4 inch waffles.
