Bacon and Smoked Gouda Pasta Salad

The smoky flavors of crisp bacon and creamy Gouda cheese in this pasta salad are brought out by the tangy Ranch-inspired sauce.

Ingredients
  • 16 oz. box of pasta (I used gemelli)
  • 5-6 slices of bacon, crumbled
  • 4 oz. smoked Gouda cheese
  • 14.5 oz. can of fire-roasted diced tomatoes
  • ½. c. green onions, chopped
  • 1 c. mayonnaise
  • ½ c. milk or buttermilk
  • 1 packet of Hidden Valley Ranch seasoning (or *Homemade Ranch Seasoning)
  • ¼ tsp. smoked paprika (increase to ½ tsp. if you're using regular Gouda instead of smoked)

*HOMEMADE RANCH SEASONING
Instead of a Hidden Valley Ranch seasoning packet, use these common spices that are already in your pantry for a fresh, homemade Ranch taste:
  • 1 tsp. fresh or dried chives
  • ½ tsp. parsley
  • ½ tsp. dill weed
  • 2 tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. salt
  • ¼ tsp. pepper
Instructions
  1. Prepare bacon by frying or baking. Sandwich cooked bacon between two paper towels and cool completely.
  2. Cook pasta according to al dente directions.
  3. While pasta is cooking, chop green onions and smoked Gouda
  4. Prepare the sauce by whisking together mayonnaise, milk, Hidden Valley Ranch packet/Homemade Ranch Seasoning and smoked paprika in a small bowl.
  5. After pasta is done cooking, drain and rinse with cold water.
  6. Transfer the cooked pasta to a large serving bowl and toss with the dressing to coat well.
  7. Add the chopped Gouda and green onions, and crumble the bacon into the salad. Mix well.
  8. Drain the diced tomatoes well and slowly fold into the salad.
  9. Chill in the refrigerator for at last two hours and up to overnight before serving to allow the flavors to blend together.
  10. Stir before serving and garnish with additional green onion, if desired.
